Gluten-Free Matcha Alfajores Cookies

From Wooden Table Baking Co.: These Matcha Alfajores shortbread cookies are made with gluten-free ingredients, with a creamy dulce de leche center. We use a mixture of rice flour, tapioca flour, potato and corn starch to make some of the best non-gluten cookies out there. Seriously, these are moist, not crazy dense, and downright delicioso!  Wooden Table Baking doesn't use “natural flavorings;” we use actual lavender, and 64% dark chocolate, because real ingredients translate into yummier cookies. Shelf-stable with a shelf life of one month after open.
